Rice pudding...

A couple of people have asked for my recipe so here it is...

2 c cooked rice (not instant)
1 c 1% milk
1/2 c egg beaters (or other egg substitute)
1/4 stick butter
1/3 c sugar
1 tsp vanilla
cinnamon to taste
1/2 c raisins (optional)

Add butter to milk, warm until butter melts. Add rice. Stir in egg beaters, sugar, and vanilla. Add cinnamon and raisins. Bake at 350 degrees for 30 minutes. Turn off oven. Let pudding set in oven until thick.

And, for the record, I am not a huge fan of rice pudding. I will eat a bit, if it is chocolate but thats a different recipe :)

  1. Thanks for sharing! I will definitely have to try this one out. :) For me it's better if it's vanilla with raspberry sauce!
